From chapters.ca:
Winter is just over, the sky is gray, and the ground is brown. Little Mortimer Mouse munches on sunflower seeds and longs to see something green. Upon overhearing the story of how springtime rain and sunshine nurture little seeds to grow into great big green plants, Mortimer is skeptical but decides to plant one of his seeds, just to see if such a miracle really can happen. Mortimer finds a perfect sport to plant the seed, and then...he waits. And waits. And waits. Impatient, Mortimer thinks nothing is ever going to happen to the little seed. But then something does happen. Something wonderful. Something divine. Something green!

Big Mama Makes the World by Phyllis Root, illustrated by Helen Oxenbury

From chapters.ca:
When Big Mama made the world, she didn't mess about. Earth sky and sea, sun and moon, plants and trees, fish, birds and animals all fell right in line with Big Mama's plans. What Big Mama wants, Big Mama gets. That's how it is. It wasn't easy, either, with that little baby to take care of. But nothing stops Big Mama. Not for a second. Through it all - from darkness to light, from far up in the clouds to the bottom of the ocean, from a ball of mud to a big bang - shines Big Mama, larger- than- life and down- to- earth, with her baby sitting on her hip and the laundry piling up.

Gatty's Tale by Kevin Crossley-Holand

From the back of the book:
in the year 1203, nine companions set out on a great pilgrimage. The journey - on food, on horseback and by sea - is fraught with danger. Not all of them will come home. Among them is Gatty, whose whole life has been spent working in the fields. Bright, eager and resolute, with the singing voice of an angel, she is at the heart of this enthralling novel that sweeps across Europe towards Jerusalem. We come to know the pilgrims intimately - their bickering, praying and joking, their fear and exhaustion, their loyalty and sacrifice as they face thieves and storms and precipices, a vicious attack and a heartbreaking bereavement. Gatty's curiosity and reckless impulsiveness land her in danger, yet she is transformed by her experiences and by her exposure to new people and new ideas. How can she go back to her old life in the Welsh Marches after this?

A Wrinkle in Time by Madeleine L'engle

From the back of the book:
Meg Murray, her little brother Charles Wallace, and their mother are having a midnight snack on a dark and stormy night when an unearthly stranger appears at their door. He claims to have been blown off course, and goes on to tell them that there is such a thing as a "tesseract," which, if you didn't know, is a wrinkle in time.
Meg's father had been experimenting with time-travel when he suddenly disappeared. Will Meg, Charles Wallace, and their friend Calvin outwit the forces of evil as they search through space for their father?

The series continues beyond the three books pictures above, but I have not read them.
